Jill’s Easy Chickpea Salad

I found this recipe years ago from It’s A Zesty Life blog and its a lunch staple in our house. It’s just the right consistency for a substantial vegetarian salad that is actually filling. I always double it; and, I leave out the nutritional yeast because I don’t love the cheesy taste it gives. Enjoy! -C
EQUIPTMENT
large mixing bowl
potato masher
INGREDIENTS (can be doubled!)
1 15oz can chickpeas
1 cup chopped celery
2 tbsp mayonaise
1 tsp dijon mustard
¼ cup green onion
2 tbsp chopped fresh dill
2 tsp dill relish
½ tsp garlic powder
1 tsp nutritional yeast
1 tsp of each salt and pepper
1 lemon squeeze
INSTRUCTIONS
Rinse and strain chickpeas and add to mixing bowl.
Mash them with potato masher until 80% are mashed.
Add all other ingredients to bowl and mix.
Taste for additional salt or extra lemon squeeze and enjoy!
