Our Family Favorite Cranberry Relish

There are cranberry sauce people and there are cranberry relish people.  My mom is a cranberry relish person and this is the recipe she always serves with her turkey.  It’s the perfect blend of tart and sweet.  This recipe makes a large batch so you can half it or freeze half if you serve turkey for Christmas as well.  It freezes well!

EQUIPMENT
Food processor


INGREDIENTS
1lb fresh cranberries
2 ½ cups granulated sugar
2 granny smith apples, finely chopped
2 oranges, juiced
8oz can of crushed pineapple
1 cup chopped pecans


INSTRUCTIONS
In a food processor or chopper, chop cranberries.
Pour cranberries in a large bowl.Add sugar and stir.
Add chopped apples, orange juice and crushed pineapple; stir to combine.
Right before serving, add chopped pecans and stir to combine.


Notes
You can make this a couple days ahead and store in the refrigerator.  Do not add the pecans until right before serving, though.
