Quick and Healthy Maycember Dinners

May Madness or “Maycember”, as Christine calls it, is arriving soon. Let’s be honest, for many of us, it does rival the busy-ness of December. We are preparing this year by rounding up a few excellent, easy meals that will get you through the crazy.   A cropckpot and a few whole food ingredients will provide a delicious, healthy meal. Bonus- they reheat well.

1) Egg Roll in a Bowl Delicious Asian flavors pair well with jasmine rice.

2) Ropa Vieja A Cuban classic. I serve this zesty dish with yellow rice and black beans.

3) Chicken Taco Bowls Arguably the most flexible of these recipes. Serve with your favorite taco toppings and seasoned rice.

4) Potato Soup A loaded baked potato in your mouth!
