Angelena's summer breakfast sandwich

A healthy summer breakfast sandwich.  A sliced baguette is spread with zucchini butter and layered with gently fried egg, bright green arugula and topped with crumbles of goat cheese.

Breakfast is my most important meal. It is the only meal I choose without regard for anyone else’s preferences or food goals. My perfect breakfast generally centers around protein and greens...trying to be healthy here. After I perfected my recipe for zucchini butter, and idea was born! Most of these ingredients were chosen to contrast the subtle, rich taste of the zucchini butter; but, this is adaptable, don't hold back with experimenting in the kitchen! 



INGREDIENTS

Baguette, or your bread of choice

2 Eggs  

Arugula

Goat cheese


Slice a gently warmed baguette and add zucchini butter.

Add a small handful of arugula. 

Prepare your eggs. I think that poached would be the loveliest way to have it but honestly I gently fry mine most of the time. Place on top of the arugula. 

Add another small amount of arugula and top with crumbles of goat cheese.

Notes: I like recipes that provide a lot of flexibility. Generally, I fry my egg because it is simplest for me. However, a poached egg would be amazing. I can also envision a triple cream cheese pairing well with this too. Think St. Andre or Brie. I would love to know how you decide to prepare this.
