Finger Lickin’ Chicken Recipe

This recipe was on rotation when I was growing up in the 80’s. I was delighted to find it when I was recently visiting my mom in South Florida. It’s from a vintage cookbook called Loving Spoonfuls and the recipe was created or submitted by Lil Solomon. Loving Spoonfuls was created by the Barbara Haven Biscayne Cancer League as a way to fundraise for the AMC Cancer research Center and Hospital. The extraordinary women put together some of the best recipes of my childhood and I want to share with you all!

INGREDIENTS
3-4 lbs chicken parts
1 16oz jar of your favorite french dressing
1 envelope Lipton Onion Soup Mix
1 1/2 lbs apricot preserves

INSTRUCTIONS
Pre-heat oven to 350.
Line a pan with foil.
Mix dressing, soup mix, and preserves in a large bowl.
Dip chicken parts into mixture and coat well.
Place on foil-lined pan and bake for 30 minutes.
Turn chicken and bake for 30 more minutes.
Turn chicken once again and raise oven temp to 375-400 and bake for 15 minutes.
During this time, the glaze should thicken.
Serve with lo-mein or white rice.
